Quince & Apple Sauce Muffins
INGREDIENTS
400g Quince and Apple Sauce (homemade)
150g Flour
125g Butter (room temperature)
80g Brown Sugar
100g fine Oats
1 Egg
1tsp Vanilla
2tsp Baking Powder
0.5tsp Baking Soda
1pinch Salt
Butter & Flour for the muffin tin.
PREPARATION
Preheat the oven: 180C/350F. Grease and flour the muffin form or use paper lining.
Cream the butter and sugar.
Add and mix the egg, vanilla and fruit sauce.
In a separate bowl mix the salt, baking powder, baking soda, oats and flour. Add this mix to the butter mixture and mix until homogenous.
Fill the muffin tin up to 3/4.
Bake for +-25 min or until golden brown. Leave to cool for 5 min. ENJOY!! Lovely with butter!

Of course, you can use any kind of fruit sauce for this recipe, one which is thicker and chunkier rather than liquid. Add anything else that could complement that fruit sauce : spices, nuts, dried or fresh pieces of fruit... The sky is the limit!!
To be honest, I even changed half of the white flour for spelt in this recipe. Very nice too!
